More Ways to Roast Corn for Salad
Using canned fire-roasted corn works really well and cuts down on prep time. Just drain well and toss into the salad.
Grilling: Grilling the corn is the best way to to get that deep, rich flavour from the corn that we want. Just brush with oil and season well before grilling for a few minutes on each side to get some nice char marks.
Stove-top – If you have a grill pan then you can grill the cob of corn right on your stove top. You can also cut the corn kernels off the cob and pan-roast the corn in a skillet on the stove-top over medium heat.
Oven – Cut the corn kernels off the cob, and toss the kernels with a tablespoon of olive oil and a pinch of salt. Roast them on a sheet pan in the oven at 350 degrees F for about 15 to 20 minutes.
How to Store Grilled Corn Salad
This salad stores really well in the fridge when placed in an airtight container. It will keep for up to 3-4 days when properly stored and chilled.
Since it does store so well, you can make it ahead of time. I would not recommend freezing this salad.

Corn – To make things easier we use canned roasted corn. You can also pan roast corn kernels in a little butter or oil in a cast iron skillet if you can’t find any already prepared roasted corn. Ideally though, roasting fresh ears of corn at home on your BBQ is going to give the best smoky flavor.
Bacon – You want perfectly crisp bacon here. Don’t use the pre-made bacon or bacon bits.
Onions – Use a large red onion. You can soak it in cold water for a bit to tame the flavor a little.
Tomato – Any type of tomato works really. You could also use cherry tomatoes or grape tomatoes.
Ranch Salad Dressing – Use your favourite ranch dressing.
Cheddar Cheese – Sharp cheddar cheese is best here. Shred your own for the best flavour. Pre-shredded cheese just doesn’t hit the same way.
Garlic Powder – Adds a little extra punch to the dressing.
Salt & Pepper – Brings it all together.
Then garnish with fresh herbs. I used parsley but cilantro would work well too.
