Can You Make Homemade Cobb Salad Ahead?

You can make parts of this Cobb salad recipe ahead of time, but wait to assemble and dress it right before serving so that it doesn’t get soggy.

I recommend making these items ahead of time and then freshly preparing the rest just prior to serving:

Bacon – To keep your bacon crisp, store it in an airtight container in the fridge.

Hard-Boiled Eggs – The best way to store hard-boiled eggs is to keep them in an airtight container, unpeeled. They can be stored like that for up to a week!

Chicken – Chicken can be prepared, and once cooled, stored in an airtight container for up to 3 days. Store whole and slice just prior to serving to keep the chicken moist!

Dressing – Homemade ranch dressing should be stored in an airtight container, such as a mason jar, and refrigerated for up to two weeks.

You can store the undressed salad components separately in airtight containers in the refrigerator for 3-4 days.

About the Ingredients for the Keto Cobb Salad

Veggies – Romaine lettuce is typically used to make cobb salad, you can also include a mix of baby greens. In addition I added cucumber and avocado. Tomatoes are also keto friendly so you could include some fresh tomato slices or wedges – halved grape tomatoes or cherry tomatoes work too.

Protein – Bacon, egg, and chicken are mainstays of any cobb salad, and they are very keto friendly too!

Toppings – We topped it all off with blue cheese and fresh chives but you could also include nuts or change up the cheese to your favourite!

Dressing – Our homemade ranch dressing is sugar free but full of amazing flavour! If you go with store bought dressing, make sure to check it is keto friendly.

How to Make Keto Cobb Salad with Homemade Ranch Dressing

Ranch Dressing Ingredients: 

½ cup Avocado mayonnaise (or regular mayonnaise)
¼ cup Greek yogurt
1½ Tablespoon fresh chives, chopped
1 Tablespoon fresh dill, chopped
1 Tablespoon fresh parsley, chopped
¼ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
Pinch cayenne pepper
Sea salt and black pepper, to taste
1 teaspoon Worcestershire sauce
¼ cup buttermilk

Salad Ingredients:

1 large head Romaine lettuce, washed and chopped
4 strips thick-cut bacon, cooked crispy
4 hard-boiled eggs, sliced
¾ lbs. rotisserie chicken breast, sliced
1 large avocado, sliced
1 medium cucumber, peeled and cut into half-rounds
3 oz. blue cheese
1 T. fresh chives, chopped
1 large lime, cut into 8 wedges

Directions:

  1. To prepare the ranch dressing, combine all the ingredients in a large bowl and whisk to combine. Taste and adjust seasonings as desired. Cover and refrigerate until ready to use.
  2. To prepare the salad, divide the Romaine lettuce among four serving bowls and top each bowl with equal amounts of bacon, hard-boiled egg, chicken breast, avocado, cucumber, and blue cheese.
  3. Top with the fresh chives and serve immediately with the ranch dressing and/or fresh lime wedges on the side.
