  • Blender – Use a blender or immersion blender for a smooth apple butter. I have been using a Blendtec blender for almost 10 years now, and it is used on a constant basis, but the immersion blender is so handy for making apple butter.

About the Ingredients for Cajun Sweet Potato Soup

Butter and oil – Using butter and oil together to sautee the onions adds a load of flavour without the butter smoking or browning.

Onion – Either a yellow onion or cooking onion will work. You can use a few shallots instead if you like.

Garlic – Use fresh minced garlic for the best flavour but you can use a jar of minced garlic if you like.

Cajun seasoning – Use your favourite cajun seasoning or make it yourself.

Broth – I used chicken broth, but vegetable broth would work here.

Sweet potato – Butternut squash is a good substitute if you need one. You want about 2 pounds of sweet potato or squash.

Fish sauce – Adds a bit of salt and umami to the soup. You can substitute with soy sauce if you like,

Corn – Frozen or canned kernels will work.

Paprika – Smoked paprika and cayenne work with the cajun seasoning to give the soup a little kick without too much heat. Sweet paprika will work in a pinch but smoked is much better here.

Lemon juice – Balances out all the flavours.

How to Make Cajun Sweet Potato Soup

Yields: 6 Servings | Prep time: 10 Minutes | Cook time: 37 Minutes

Ingredients:

1 Tablespoon salted butter
2 Tablespoons olive oil, divided
1 yellow onion, diced
1 Tablespoon garlic, minced
3 Tablespoons cajun seasoning, divided
4 cups chicken broth
5-6 sweet potatoes, peeled and cubed
2 Tablespoons fish sauce
1 cup corn kernels
2 teaspoons Smoked paprika
¼ teaspoon Cayenne pepper
1 Tablespoons lemon juice
salt and pepper to taste
1 pound shrimp, peeled and deveined

Directions:

Heat a dutch oven over medium high heat.

Add the butter and a tablespoon of oil to the pan once hot, then add the onion and cook until tender.

Add the garlic, and two tablespoons of the cajun seasoning. Cook for 30 seconds.

Add the sweet potatoes and broth to the dutch oven.

Bring to a boil and cook for 3-4 minutes, then reduce the heat to medium low, and allow to simmer until the potatoes are tender, about 25 minutes

Turn off the heat and allow to cool for 15 minutes.

Add the sweet potato mixture to a blender and blend on high until smooth.

Place the sweet potato puree back in the dutch oven over medium low.

Add the fish sauce, corn, paprika, cayenne, and lemon juice. Season with salt and pepper to taste.

In a medium sized bowl add the shrimp and cajun spice, toss to combine.

Heat a medium saucepan over medium heat. When hot add a tablespoon of oil.

Add the shrimp to the saucepan and cook for 4-5 minutes.

Serve the soup topped with the cajun shrimp.
