Transfer leftover soup into a sealable airtight container and refrigerate for up 3 days. Make sure the soup has cooled completely before storing it in the fridge. When ready to enjoy, just reheat over medium heat until warmed through.

About the Equipment Needed to Make Instant Pot Soup

Instant Pot – I have the instant pot duo, so that is what I would recommend using, but any pressure cooker will work.

Food Processor or Blender – I have been using a Blendtec blender for almost 10 years now, and it is used on a constant basis. I only recently had to replace the wildside jar, but otherwise it powers through anything I throw at it still! An immersion blender is another great option.

About the Ingredients for Creamy Asparagus Soup

For a vegan variation of this creamy instant pot asparagus soup, substitute olive oil for butter and full-fat coconut milk for the heavy cream.

Butter – Unsalted butter is best so you can have full control over how much salt gets added. You can use salted butter if that is what you have on hand but be sure to taste test! You can substitute olive oil for the butter if you want a vegan asparagus soup.

Onion – If you don’t have yellow onion on hand white onion is fine or even 2-3 shallots.

Garlic – Fresh garlic adds a lot of flavor.

Broth – Use chicken stock or broth for the best flavor, but use vegetable broth if you want to make this vegan.

Asparagus – Cut off the tough ends of the asparagus. Make sure you get fresh asparagus for the best flavor. Reserve a few asparagus tips for garnish prior to cooking.

Seasoning – Salt, pepper, and a bay leaf are all the seasonings you need.

Cream – Heavy whipping cream is best here, if going vegan use full-fat coconut milk instead.

How to Make Instant Pot Creamy Asparagus Soup

Serves: 4-6 | Prep time: 15 minutes | Cook time: 10-11 minutes | Natural Release: 10 minutes

Ingredients:

2 Tablespoons unsalted butter
1 small yellow onion, chopped
Salt and black pepper, to taste
3-4 cloves garlic, chopped
3 c. chicken or vegetable broth
2 lbs. asparagus, tough ends removed and cut into chunks
1 whole bay leaf
1 cup heavy cream

Directions:

Select the “Sauté” function on the Instant Pot® and add butter once hot. Add onion and season with salt and black pepper, to taste. Cook, stirring occasionally, until onions develop a bit of color and soften, approximately 4-5 minutes. Add garlic and sauté for an additional minute.

Pour in broth and deglaze the bottom of the pot, gently scraping up any brown bits off the bottom of the pot with a wooden spoon in the process. Turn unit off.

Add asparagus and bay leaf, and stir to combine. Add lid and lock into place. Position the vent to “Sealing” and set the “Manual” setting to 5 minutes.

When cook time is complete, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure. Remove lid and discard bay leaf.

To prevent curdling, temper the heavy cream by adding a small amount of the hot liquid to it before stirring it directly into the pot. Stir to combine.

Carefully transfer asparagus mixture to a food processor or high-powered blender and process until smooth. To serve, transfer hot or chilled soup to individual bowls and garnish with a few drops of heavy cream and a couple reserved asparagus tips, if desired. Enjoy!
