I think these parfaits taste best when you make the granola ahead of time. You can prepare your fruit ahead of time too, if using bananas you will need to toss them in lemon juice to keep them from browning.
If preparing these parfaits prior to eating them, we recommend waiting until right before serving to assemble them.
How do You Make a Basic Parfait?
The great thing about parfaits is that you can change up your mix-ins and toppings to create an endless amount of flavors. The base of this recipe is made up of strawberries, bananas and granola. These ingredients are common in fruit parfaits , which makes them the perfect choice for this breakfast.
You can even take things up a notch by adding sweetened coconut flakes, dark chocolate chips or even crushed peanuts. These mix-ins will give your parfait some extra texture and flavor that you’re sure to love!
What Type of Yogurt is Best for Parfaits?
We recommend using plain Greek yogurt for this parfait. It has a creamy, smooth consistency that pairs well with the crunchy granola and fresh fruit. We also think it’s important to use plain yogurt so that you can control the amount of sugar that goes into the breakfast parfaits.

What Other Fruit Go Well in Parfaits?
In this parfait, we mixed strawberries and banana slices. We also love using raspberries and blueberries in our parfaits. You can get even more adventurous though!
Try adding mango, papaya or pineapple to your parfait. All of these fruits pair well with bananas and add a tropical element to the breakfast.
About the Ingredients for Homemade Granola
Dates – The dates help sweeten the granola, but are also packed with nutrients and fiber. If you don’t like dates, or can’t find them, a mashed banana works too!
Nut butter – We used natural almond butter but you can use any nut butter you prefer.
Honey – You can also use maple syrup if preferred.
Oil – If you use creamy peanut butter you can skip the coconut oil.
Vanilla – Pure vanilla extract is best but artificial vanilla will still give you good results.
Oats – Instant oats or rolled oats are best. Steel cut oats really will not work. You need flakey oats for granola!
Seasoning – Cinnamon and salt are all the additional flavours you need.
Almonds – You can try other nuts here too, Almonds and pecans are pretty yummy in granola.
Sunflower seeds – Pumpkin seeds and other larger seeds are good swaps.

How to Make Strawberry-Banana Granola Parfait
Serves: 4 | Prep time: 10 minutes | Cook time: 20 minutes
Ingredients:
6 large dates, pitted
3 T. natural almond butter
3 T. honey
2 T. coconut oil, melted
1 t. real vanilla extract
1 c. rolled oats
½ t. ground cinnamon
¼ t. salt
¼ c. raw almonds, roughly chopped
2 T. sunflower seeds
2 c. plain Greek yogurt
2 large bananas, sliced
1 c. fresh strawberries, sliced
Directions:
Pre-heat -oven to 350°F and line an 8 x 8-inch baking pan with a piece of parchment paper, leaving a bit of overlap on the sides.
In a high-powered blender or a food processor, combine the pitted dates, almond butter, honey, coconut oil, and vanilla extract. Blend until the mixture is smooth and creamy.
Transfer the date mixture into a large mixing bowl and add the oats, cinnamon, salt, almonds, and sunflower seeds. Mix until well combined and the oats and nuts are nicely coated.
Transfer the granola mixture to the prepared baking dish and pat down into an even layer. Place in the pre-heated oven and bake until lightly golden brown and toasted on top, approximately 20 minutes.
Remove from oven and cool to room temperature. Granola will crumble as you remove it from the pan, with some larger chunks.
To serve, alternate layers of Greek yogurt, granola, sliced bananas, and fresh strawberries in 4 parfait dishes or mason jars. Enjoy!
