This fudgy peanut butter brownie is made with basic ingredients you probably already have in your pantry.

Butter – It is best to use unsalted butter and then add salt for the best flavour. That said, I often make desserts with what I have on hand, and that is generally salted butter and that works well too. Just omit half of the additional salt.

Sugar – Just plain white granulated sugar, plus a little brown sugar for the peanut butter layer.

Eggs – Make sure your eggs are room temperature before starting.

Vanilla Extract – Use pure vanilla extract for the best flavour, but artificial is just fine too.

Flour – Spoon and level the flour when measuring it.

Cocoa Powder – Make sure you use unsweetened cocoa powder for baking. Dutch-process cocoa powder is ideal. Hot chocolate mix is not what we want here, you definitely want good quality chocolate. If you like you can also include chocolate chips in the mix or on top of the brownies for even more chocolate-y flavour.

Salt – Helps to balance all the flavours and make em shine.

Peanut butter – Use your favourite creamy peanut butter. If you like nuts in your brownie then swap with crunchy peanut butter. You can use natural peanut butter if you want, but for the best results just use normal creamy peanut butter. You can also include some peanut butter chips if you like. Another option is to use another nut butter like cashew butter.

Baking powder – Make sure it is no more than 6 months old, it needs to be still active.

Note: For a shortcut, you can use a box brownie mix for the chocolate layer.

How to Make Peanut Butter Brownies

Ingredients:

Chocolate Layers:

  • ½ c. unsalted butter, melted
  • 1 c. granulated sugar
  • 2 large eggs
  • 1½ t. vanilla extract
  • ½ c. all-purpose flour
  • ½ c. unsweetened cocoa powder
  • 1/8 t. salt

Peanut Butter Layer:

  • 1/3 c. creamy peanut butter
  • 2 T. unsalted butter, melted
  • 1/3 c. granulated sugar
  • ¼ c. packed brown sugar
  • 1 large egg
  • ½ t. real vanilla extract
  • ½ c. all-purpose flour
  • 1 t. baking powder
  • 1/8 t. salt

Directions: 

Preheat oven to 350°F and line an 8” x 8” pan with parchment paper.

Mix all the ingredients for the chocolate layer in a large bowl, adding in the flour, cocoa powder, and salt last. Lightly fold in the flour and cocoa powder until just mixed. (Do not over mix or the brownies will turn out cake-like, and we want a perfectly chewy brownie.)
