I am so excited to share this recipe for Roasted Apple Cauliflower Mash with you! It’s a perfect Thanksgiving or Christmas dinner side dish that is both sweet and savory.

The roasted apple cauliflower mash pairs well with the turkey and/or ham you’ll be serving this holiday season. The mashed cauliflower provides a healthy, low-carb option to traditional potatoes, too!

About the Ingredients for Roasted Apple Cauliflower Mash

Cauliflower – If fresh cauliflower is out or season or a little too costly, you can use frozen here!

Apples – Sweet, crisp apples like Royal Gala work best. Avoid tart apples.

Shallots – You can use yellow onions instead.

Rosemary – Fresh rosemary is best, if you use dry then halve the amount.

Oil – Extra virgin olive oil is best but you can substitute any neutral flavoured oil.

Salt & Pepper – To taste.

Brussels Sprouts – To prepare your brussels sprouts, give them a good rinse in the sink. Next peel off any outer leaves that are shrivelled or browned, otherwise you can keep the outer leaves on the Brussels sprouts. Then, give any stalk left on it a good trim, and slice the Brussels sprouts in half, length-wise.

Garlic Cloves – For best results use fresh garlic, and you can certainly use more garlic if you like.

Cherries – If you can’t get a hold of fresh cherries, then dried cranberries or pomegranate arils will work here to provide the tart sweetness the cherries bring.

Half and half – Half and half is cream that is half milk and half heavy cream, it is 10% milk fat. If you don’t have access to this you can use milk or cream, or a mixture of half and half. Cream will give a richer flavour than milk.

Butter – While the recipe calls for unsalted butter, you can definitely use salted butter and just adjust the added salt accordingly.

Pistachios – Pistachios add a nice nuttiness and crunch. You can substitute with any other nuts or leave out entirely.

How to Make Roasted Apple Cauliflower Mash

Yields: 4 Servings | Prep time: 10 mins | Cook time: 25-30 mins

Ingredients:

1 medium cauliflower head, roughly chopped
2 Gala apples, roughly chopped
2 large shallots, roughly chopped
1 T. fresh rosemary leaves, minced
2 T. extra virgin olive oil, divided
Sea salt and black pepper, to taste
1 lbs. Brussels sprouts, washed, trimmed, and halved
2 garlic cloves, finely minced
1 c. fresh cherries, pitted and roughly chopped
2 T. half & half
2 T. unsalted butter
½ c. pistachios, shelled and roughly chopped

Directions:

Preheat oven to 375°F and line a rimmed baking sheet with a piece of parchment paper or a Silpat® baking mat. Set aside.

Add the cauliflower, apple, shallots, rosemary leaves, and one tablespoon olive oil to a large bowl. Season with salt and black pepper, to taste, and toss to combine.

Spread the cauliflower mixture into a uniform single layer onto the prepared baking sheet and place in the pre-heated oven to roast until the cauliflower is fork tender, approximately 25-30 minutes.

Meanwhile, heat the remaining olive oil in a large, high-sided skillet over medium heat. Add the garlic and cook, stirring frequently, until it becomes fragrant, approximately 30 seconds. Add the Brussels sprouts and cook, stirring only occasionally, until they become golden brown and crispy, approximately 15 minutes.

Add the fresh cherries and cook, stirring frequently, until just heated through, approximately 2 minutes.

Once the cauliflower is done, transfer the roasted veggies to a large mixing bowl. Add half & half and unsalted butter and season with salt and black pepper, to taste. Mash with a potato masher or blend with an immersion blender until mostly smooth. Set aside.

Spread the warm cauliflower and apple mash on the bottom of a large serving dish or bowl. Top with the crispy Brussels sprouts, warm cherries, and chopped pistachios before serving. Enjoy!
