These are the BEST Banana Nut Muffins you will ever make! They are soft, buttery and a delicious way to use up overripe bananas.
These easy Banana nut muffins are perfect for breakfast or as an after-school snack! They freeze well after baking too so you can make large batches, perfect for busy mornings when you need something on-the-go!
Ingredients for Easy Banana Muffins
This easy banana muffin recipe requires some pretty basic ingredients like bananas, flour, and milk.
Flour – Use All-purpose flour or your favourite 1:1 flour. Spoon and level the flour when measuring it, otherwise you’ll wind up with dense muffins.
Butter – Use melted unsalted butter, although melted coconut oil works too.
Bananas – Use overripe bananas. If you have frozen ones, that works too, just thaw them out. Don’t get too hung up on the number of bananas. If you only have 2 bananas, that will work too, there will just be less banana flavour.
Vanilla Extract – Use pure vanilla extract for the best flavour, but artificial is just fine too.
Eggs – Bring to room temperature before baking with eggs if possible. They mix better and the dough will rise better.
Milk – Use your favourite milk, whether cow milk or plant based, this is so we don’t end up with a dry muffin.
Sugar – Sweetens the muffin. I use half brown and half white but you can use all of one or the other if preferred.
Baking Soda – Helps the cupcakes rise in the oven. Make sure to test for effectiveness before using if you’ve had it longer than 6 months.

Yields: 12 muffins | Prep time: 10 mins | Bake time: 20 mins
Ingredients:
Non-stick cooking spray
3-4 bananas, mashed
¼ c. unsalted butter, melted
¼ c. milk
1 large egg
1 t. vanilla
½ c. brown sugar
½ c. sugar
2 c. all-purpose flour
1 t. salt
1 t. baking soda
1 c. walnuts, chopped + extra to top muffins before baking, if desired
Directions:
Preheat oven to 350°F. Spray a standard muffin tin with non-stick cooking spray and set aside.
Add the mashed bananas, melted butter, and milk to a large mixing bowl. Mix to combine.
Beat in the egg and vanilla, and brown sugar.
Add in the remaining dry ingredients and fold in until just mixed. Then, fold in the walnuts.
Fill muffin pan cups to about 4/5 full. Top with additional walnuts, if desired.
Place in the pre-heated oven and bake for 18-20 minutes, or until toothpick inserted in the center of a muffin comes out clean. Remove from oven and cool for at least 5-10 minutes before serving. Enjoy!
