Ingredients
- 8 oz Cool Whip, thawed
- 12 oz fresh cranberries, rinsed and dried
- ½ cup granulated sugar
- 4 oz crushed pineapple, well drained
- 2 cups mini marshmallows
- ½ cup chopped walnuts
Directions
- Prepare the Cranberries:
Place the cranberries in a food processor and pulse until finely chopped. Transfer to a bowl, sprinkle over the sugar, and stir to coat. Cover and refrigerate for at least 1 hour to soften the cranberries and mellow their tartness. - Combine the Mix-ins:
After chilling, pour off any excess liquid from the cranberries. Add the crushed pineapple, mini marshmallows, and walnuts. Stir until evenly combined. - Fold in the Cool Whip:
Gently fold the Cool Whip through the mixture until the salad is fully incorporated and fluffy. - Chill and Serve:
