  • 8 oz Cool Whip, thawed
  • 12 oz fresh cranberries, rinsed and dried
  • ½ cup granulated sugar
  • 4 oz crushed pineapple, well drained
  • 2 cups mini marshmallows
  • ½ cup chopped walnuts

Directions

  1. Prepare the Cranberries:
    Place the cranberries in a food processor and pulse until finely chopped. Transfer to a bowl, sprinkle over the sugar, and stir to coat. Cover and refrigerate for at least 1 hour to soften the cranberries and mellow their tartness.
  2. Combine the Mix-ins:
    After chilling, pour off any excess liquid from the cranberries. Add the crushed pineapple, mini marshmallows, and walnuts. Stir until evenly combined.
  3. Fold in the Cool Whip:
    Gently fold the Cool Whip through the mixture until the salad is fully incorporated and fluffy.
