What is sous vide cooking?
Sous vide is a cooking technique where food is vacuum-sealed in a bag and then cooked in a very precise temperature in a water bath. It results in perfectly cooked food every single time.
The technique has been used for years in high-end restaurants but is also really accessible to home cooks thanks to a number of affordable and easy-to-use sous vide precision cooking equipment.
Sous vide cooking is really simple:
1. Attach your sous vide precision cooker to a pot of water and set the time and temperature according to your desired level of doneness.
2. Put your food in a sealable bag and clip it to the side of the pot.
3. Finish by searing, grilling, or broiling the food – we want to put the maillard reaction to work and finish the chicken off for the best flavor possible. For this recipe we give the chicken a quick sear.
What Equipment do I Need to Cook Sous Vide?
Getting started with sous vide cooking is easy and affordable thanks to the recent availability of sous vide devices built for the home cook. These are the products I use, love and recommend:
- A sous vide precision cooking device – Obviously a sous vide device is the most important part of this technique.
- Packaging for your food, like resealable bags or canning jars. If you use a sous vide bag or ziploc bags, most do not require a vacuum sealer.
- A container to hold the sous vide water bath, like a large pot or storage container
About the Ingredients for Sous Vide Chicken Breast
Chicken – The cook times and temperature presented here is for boneless skinless chicken breasts only. Other cuts of chicken may require a higher temperature and cook time. You will need to look up the different temperatures and cooking time required.
Marinade – We used italian seasoning, salt and pepper as a simple seasoning for the chicken. If you don’t have italian seasoning you can use dry herbs of your choosing like basil, oregano, and rosemary, or use fresh herbs instead.
Olive oil – Any neutral flavoured oil will work here for searing the chicken.
The salad I served my chicken with is composed of 4 cups salad greens, 3 large heirloom tomatoes, 6 oz. fresh mozzarella, fresh basil, and salt and pepper drizzled over with a simple balsamic dressing.

How to Make Sous Vide Chicken Breasts
Yields: 4 servings | Prep time: 15 minutes | Cook time: 1 hour and 15 minutes
Ingredients:
4 boneless, skinless chicken breasts
2 t. Italian seasoning
Sea salt and black pepper, to taste
1 T. extra virgin olive oil
Directions:
Fill a large container or pot with water and attach the sous vide circulator to the side. Set the temperature to 145°F and the cook time to 1 hour and 15 minutes.
While the water bath heats up, sprinkle the chicken breasts on both sides with the Italian seasoning and season with salt and black pepper, to taste.
Place chicken breasts in an airtight plastic bag and remove as much air as possible before sealing.
Once the temperature of the water bath reaches the set temperature, add the sealed bag. (The bag will sink if enough air has been removed). Adjust the sous vide timer back to one hour and fifteen minutes, if necessary.
When the cook time is complete, remove the chicken breasts from the water bath and discard any liquid in the plastic bag. Transfer the chicken breasts to a plate and pat dry with a paper towel.
Heat the olive oil in a large skillet over medium heat and sear the chicken breasts on each side until they develop a bit of color, approximately 3-4 minutes per side.
Remove from heat and rest for 5 minutes before serving.
