How to Make a Strawberry Key Lime Cheesecake

Yields: 9-inch round cheesecake | Prep time: 20 Minutes | Cook time: 1 hour 15 Minutes

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • ½ cup unsalted butter, melted
  • 2 tablespoons lime zest

For the Cheesecake Filling:

  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 3 – 8 oz cream cheese, softened
  • 4 large eggs, room temperature
  • 2/3 cup sour cream
  • 1/3 cup heavy cream
  • 1/2 cup Strawberries, pureed
  • 2 tablespoons key lime juice
  • 3 drops pink gel food coloring

For the Key Lime Sour Cream Topping:

  • 1 ½ cup sour cream
  • 2 tablespoons sugar
  • 1 teaspoon key lime juice
  • 1 tablespoon lime zest
  • Homemade whipped cream

Directions:

Preheat the oven to 350 degrees Fahrenheit. Line the bottom of a 9-inch springform pan with parchment paper and spray with baking spray. Line the outside of the pan with foil. Make sure the outside is wrapped enough in foil to ensure no water seeps into the pan.

Using a large bowl, whisk the graham cracker crumbs, sugar, and lime zest. Mix in the melted butter until a wet mixture forms. Press the crust evenly into the pan.

Bake in the oven for 10 minutes, remove and allow to cool.

Reduce oven temperature to 325 degrees Fahrenheit.

Fill a large roasting pan ¼ way full with warm water, and place into the oven.

For the cheesecake filling, whisk together the sugar and cornstarch in the bowl of a stand mixer until well combined.

Add cream cheese and blend until smooth.

Mix in the eggs one at a time, mixing just until combined after each addition. Scrape down sides and bottom of the bowl.

Add sour cream and heavy cream and mix until combined.

Mix in strawberry puree, lime juice and pink food coloring.

Tap the bowl forcefully against the countertop to release any large air bubbles.

Pour over cooled graham cracker crust.

Place cheesecake in the roasting pan then place the roasting pan in the oven and carefully pour in enough boiling water around the cheesecake pan to reach halfway up the side of the cheesecake pan.

Bake in a preheated oven until cheesecake is nearly set but still jiggly in the center, about 60 – 65 minutes.

In a medium bowl, whisk the sour cream, sugar, key lime juice, lime zest until combined.

Pour over the cheesecake and smooth evenly.

Bake in the oven for 10 minutes, then allow to cool to room temperature.

Place into the fridge overnight.

Top with whipped cream, strawberry slices and lime wedges.
