Imagine the juicy sweetness of ripe strawberries mixed with the zesty kick of traditional pico de gallo ingredients: jalapeno, onions, cilantro, and a splash of lime. It’s a match made in heaven! This fruity, usalsa is just the thing to liven up your summer barbecues, taco nights, or even just a snack session with some crispy tortilla chips.
So grab your ingredients, and let’s get started!

How to Store Leftovers
Strawberry pico de gallo is best when fresh, but don’t worry if you have some leftovers! You can easily store it in your refrigerator for up to three days. To do this, place the pico de gallo into an airtight container and store it in the refrigerator.
I do not recommend freezing strawberry pico de gallo, as it will not taste the same once thawed. The texture may be off and the flavors won’t be as vibrant.
About the Ingredients for Strawberry Pico de Gallo
Strawberries – Use only ripe, fresh strawberries.
Lime – Use a fresh lime for best results. In a pinch you can use bottled lime juice.
Jalapeno – Once jalapeno’s are seeded I find them pretty mild in spice level, but they have a unique flavour that adds a lot to guacamole. Serrano’s are a great swap that I think work well.
Onion – White onion is a good choice for eating onions uncooked. They have a stronger flavour than yellow onions but it doesn’t linger. To tame the flavour you can soak them in cold water for 10 minutes. You could also use red onion instead.
Cilantro – If you dislike cilantro, try substituting with flat leaf parsley. It has a similar flavour profile but without that soapy flavour that causes people to dislike cilantro.
