Mango – Use only perfectly ripe mango. I used red mango, but any variety of mango will do.

Bell pepper – Use a firm, fresh red bell pepper. You can use any other bell pepper if you like but the sweetness of a red bell pepper works best.

Red onion – A small red onion should give you about 3/4 of a cup to one full cup. Feel free to substitute with white onion if you prefer. If you want a milder flavour, soak the diced onion in cold water for about 10 minutes.

Jalapeno – Seeding and removing the core from the Jalapenos removes most of the spice of the pepper, leaving behind the smoky flavour. Keep the seeds and core along with the rest of the pepper when dicing for a spicier salsa. If you don’t like spice, you can omit the jalapenos and substitute it with a green bell pepper instead.

Lime – Juice a fresh lime for the best flavour. You may use bottled juice instead, but the flavour won’t be as good.

Cilantro – If you don’t like it, feel free to omit it entirely. I do not recommend substituting with other herbs.

Salt and pepper – Salt and pepper your salsa to taste both before, and if necessary, after chilling.
