Basil – Fresh basil is essential. Do not substitute with dry basil for the bruschetta.

Garlic – Feel free to use more garlic if you like.

Cheese – Shred your own mozzarella cheese, prepared shredded cheese has additives that affect how it melts.

Vinegar – If you don’t have balsamic vinegar you can substitute with red wine vinegar mixed with 2 teaspoons of sugar.

Chicken – I used boneless skinless chicken breasts. You could use chicken things if you prefer dark meat but I highly recommend chicken breasts.

Seasonings – For the chicken we are using dried spices and herbs along with salt and pepper. You can substitute with Italian seasoning if you prefer.

How to Make Skillet Bruschetta Chicken

Ingredients:

For the Bruschetta:

  • 1 cup roma or campari tomatoes, chopped
  • 2 tablespoons red onion, diced
  • ⅓ cup fresh basil, stems removed and chopped
  • 2 garlic cloves, minced
  • ½ cup mozzarella cheese, shredded
  • 2 tablespoons balsamic vinegar

For the Chicken:

  • 4 boneless skinless chicken breasts
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley
  • ½ teaspoon dried basil
  • ½ teaspoons salt
  • ¼ teaspoon pepper
  • 1 tablespoon avocado oil

Directions:

Preheat oven to 400 degrees Fahrenheit.

Turn off the heat and place the skillet in the preheated oven for 15-20 minutes to finish the cooking process. Internal temperature of chicken should reach 165 degrees F when fully cooked.
