Chicken – Boneless chicken thighs are moist and flavourful. You can use chicken breast pieces instead if you prefer.

Seasoning – You can use store bought jerk seasoning or use your own homemade jerk seasoning.

Sauce – Use your favourite store bought jerk seasoning.

Coleslaw – You can shred your own cabbage and carrots or use a prepared mix.

Mango – Fresh mango only.

Juice – Any tropical fruit juice that you prefer.

Mayonnaise – You can use either real mayonnaise or a dressing like miracle whip.

Lettuce – You can use any lettuce you prefer in place of green leaf lettuce.

Buns – Any type of slider buns you pefer.

How to Make Caribbean Jerk Chicken Sliders

Yields: 8 servings | Prep time: 18 minutes | Cook time: 28 minutes

Ingredients:

  • 8 Chicken Thighs, boneless and skinless
  • 2 tablespoons Jerk Seasoning
  • ¼ cup Jerk Sauce
  • Salt & Pepper
  • 1 cup Coleslaw Mix
  • 2 Mangoes, diced small
  • ½ cup Tropical Fruit Juice
  • ½ cup Mayonnaise
  • 8 Green leaf Lettuce leafs
  • 8 Slider buns
  • 1 tablespoon Butter
  • 1 teaspoon Jerk Seasoning
  • 1 teaspoon Minced Garlic

Directions:

Place the chicken thighs in a large resealable plastic bag. Add the Jerk seasoning to the bag, using your hands rub the seasoning onto the chicken and seal the bag.

Place the bag in the refrigerator for 5-6 hours or overnight.

In a medium sized bowl add the coleslaw mix, diced mango, mayo, and tropical juice. Mix to combine. Cover and refrigerate for 1-2 hours.

Place the chicken thighs on a Ninja Griller or a BBQ grill. Cook until almost done about 15-18 minutes.

Using a sauce brush coat each chicken thigh with the Jerk sauce. Place back in the Ninja or grill for an additional 4-5 minutes. Set the chicken aside.

Preheat your oven to 350 degrees Fahrenheit.

Place the top of the slider buns on one baking sheet, and the bottoms on a separate baking sheet.

In a small bowl melt your butter and add the minced garlic and jerk seasoning. Mix to combine.

Brush the jerk butter mixture on top of the top slider buns.

Place the buns in the oven for 5 minutes.

Place the green leafy lettuce on top of the bottom slider buns, then add the jerk chicken thighs, and top with the mango coleslaw.

Place the top portion of the slider bun on top of the slaw, lightly press down on the bun with your hands.

Serve and enjoy!
