What is Sous Vide Cooking?

Sous vide is a cooking technique where food is vacuum-sealed in a bag and then cooked in a very precise temperature using an immersion circulator in a water bath. It results in perfectly cooked food every single time.

The technique has been used for years in high-end restaurants but is also really accessible to home cooks thanks to a number of affordable and easy-to-use sous vide precision cooking equipment.

Sous vide cooking is really simple:

1. Attach your sous vide precision cooker to a pot of water and set the time and exact temperature according to your desired level of doneness.

2. Put your food in a sealable bag and clip it to the side of the sous vide bath with the immersion cooker.

3. Finish by searing, grilling, or broiling the food – we want to put the maillard reaction to work and finish the chicken off for the best flavor possible. For this recipe we give the chicken a quick sear.

What Equipment Do I Need to Cook Sous Vide?

Getting started with sous vide cooking is easy and affordable thanks to the recent availability of sous vide devices built for the home cook. These are the products I use, love and recommend:

  • A sous vide precision cooking device – Obviously a sous vide device is the most important part of this technique as it provides the precise temperature control and heat. We love and use our Anova precision cooker.
  • Packaging for your food, like resealable bags or canning jars. If you use a sous vide bag or ziploc bags, most do not require a vacuum sealer. Vacuum seal bags will require a vacuum sealer.
  • A container to hold the sous vide water bath and sous vide cooker, like a large pot or storage container.
  • You will probably also want a cast iron skillet for finishing the chops.

About the Ingredients for Sous Vide Pork Chops

Pork chops – You want to look for thick cut, bone-in pork chops, the cook times will change for boneless pork chops or thinner chops.

Seasoning – We are using salt, pepper, fresh garlic, fresh herbs and Italian seasoning for these pork chops. You can, of course, use your own favourite seasoning instead.

Oil – Olive oil is neutral flavoured, you can substitute with any other neutral flavoured oil like vegetable oil.

How to Make Sous Vide Bone-In Pork Chops

Yields: 4 Servings | Prep time: 10 minutes | Cook time: 2 hours 10 minutes

Ingredients:

4 bone-in thick-cut pork chops
Sea salt and black pepper, to taste
2 teaspoons Italian seasoning
2-4 cloves garlic, crushed
Optional: Sprigs of fresh oregano, rosemary, thyme, and/or basil
2 Tablespoons extra virgin olive oil

Side Dish Ingredients:

2 large firm apples, peeled and cut into wedges
1 large fennel bulb, trimmed and sliced
1 large red onion, cut into thick slices
2 Tablespoons extra virgin olive oil
2 Tablespoons fresh thyme leaves
2 teaspoons garlic powder
1 teaspoons ground cloves
1 teaspoons ground cinnamon
1 teaspoon cumin seeds, crushed
Sea salt and black pepper, to taste

Directions:

Fill a large container or pot with water and attach the sous vide circulator to the side. Set the temperature to 140°F and the cook time to 2 hours.

While the water bath heats up, season the pork chops with salt and black pepper, to taste. Sprinkle with the Italian seasoning and place pork chops in an airtight plastic bag, along with the crushed garlic and fresh herbs, if using. Remove as much air as possible from the bag as possible before sealing.

Once the water bath reaches the set water temperature, add the sealed bag. (The bag should sink if enough air has been removed).

Adjust the sous vide timer back to two hours, if necessary.

Approximately one hour before the chops are done, pre-heat the oven to 400°F and line a large, rimmed baking sheet with parchment paper or a Silpat® baking sheet. Set aside.  

Combine the apple, fennel, and red onion in a large bowl. Add the olive oil, fresh thyme, garlic powder, ground cloves, cinnamon, and crushed cumin seeds. Season with salt and black pepper, to taste, and toss to combine.

Spread the apple mixture onto the prepared baking sheet into a single layer without overcrowding. Place in the pre-heated oven and roast for 20 minutes before turning the apples and vegetables. Continue roasting the apple mixture for another 25-30 minutes or until nicely browned. Remove from oven and set aside.

When the sous vide cook time is complete, remove the chops from the water bath and discard the aromatics and any liquid in the plastic bag. Transfer the chops to a plate and pat dry with a paper towel. Set aside.

Heat two tablespoons olive oil in a cast iron pan over medium-high heat and add the chops. Pan sear the chops on each side until golden brown, approximately 2-3 minutes per side.

Remove the cooked chops from heat and rest for 5 minutes before serving with the roasted apples, fennel, and red onion, Enjoy!
